INGREDIENTS
- 7.5 kg Beef and 2.5 kg sheep tail fat
- 100 g Coarse salt
- 10 g Ground allspice
- 10 g Coriander
- 15 g Freshly ground Black Pepper
- 100 ml Worcestershire sauce
- 200 ml Vinegar
- 10X1 kg salami casings #43
METHOD
- Using a sharp knife cube all the meat.
- Combine all the ingredients and mix into meat.
- Mince through number 8 mincer plate.
- Place meat into ziplock bag and refrigerate for 3 hours.
- Prepare #43 salami casing.
- Stuff casings with minced meat mixture.
- Freeze casings to make for easy slicing at 4mm.
- Once sliced place 160 units on your trays and place into KK11.
- Set temperature to 30 degrees for 24 hours.
- Ready in 18-24 hours.
Tip – in high humidity areas place your product into a brown paper bag into fridge and eat when hungry.
