The KK16 Biltong Boss is a heavy duty stainless steel biltong dryer for making biltong, dry sausage, jerky, fruit, herbs and rusks. It hangs 140 pieces across two 6 bar racks, holds 16 stainless steel mesh trays, and runs two motors with a digital biltong setting up to 96 hours at 20 to 30°C plus a dehydrating setting up to 24 hours at 35 to 90°C.

Built heavier than the smaller cabinets. A 0.6 to 0.8mm SS304 housing, a full 304 stainless interior including the mesh trays and drip tray, and two motors instead of one.

If you are drying most weeks, or people have started asking to buy what you make, this is where the smaller cabinets run out of room.

Biltong takes days, not hours. The biltong setting runs up to 96 hours at 20 to 30°C, so a full batch goes through without you touching the dial. The KK11’s 24 hour timer needs a reset every morning. These two do not.

About this item

What you get and why

A hundred and forty hooks

Two 6 bar racks. That is not a batch for the family, it is a batch for the market stall, the rugby club or the whole extended family at Christmas.

Two motors instead of one

Air moves through a bigger cabinet properly, so the pieces at the back come out like the ones at the front even when it is full.

Stainless right through

A 0.6 to 0.8mm SS304 housing, SUS304 mesh trays and a stainless drip tray. Everything the meat touches is 304, and it all lifts out for the wash.

Still set it for four days and walk away

The biltong setting runs up to 96 hours at 20 to 30°C. Load it, set it, leave it.

Sixteen trays for everything that will not hang

SUS304 mesh trays and a drip tray. Jerky, fruit, herbs and rusks on the dehydrating setting, 35 to 90°C.

Flies stay outside

Gasket and wire mesh construction. On a cabinet this size a lost batch costs real money, so the seal earns its keep.

Biltong

We missed authentic biltong from SA and that’s why this box exists in the first place. Take silverside or topside, slice it with the grain, hang it on the hooks and let the cabinet do the rest. 3 to 4 days later you have proper beef biltong at home, for way less than you pay in a shop. Venison works too if you like a stronger taste. Kudu as well, if you can get it.

Droëwors

Spiced sausage, dried until it snaps when you bend it. The hooks will take a whole run from the butcher in one go. One customer hung 4.8 metres in a single batch. Because it hangs, it stays round instead of going flat on one side the way it does on a tray.

Bluefin, marlin & dried fish

Not just a biltong box after all. Snapper, kahawai, marlin and bluefin all dry well. So that good fishing weekend does not take up valuable freezer space, or worse, have to be given away to friends and family.

Dried fruit, veg & rusks

Finally an easy way to get your 5 in with delicious kale chips you will not want to share. Green beans, courgette, cherry tomatoes. Plus all the fruits come out perfect for snacks, baking, cocktail garnish, and you can even use it to make dried rusks.

Fruit leathers

Bananas, pears, strawberries, peaches, apricots, apples, mango. Blend it into leather for the lunchbox, or dry slices for cereal, baking and salads. Sweet, and nothing in it but the fruit.

Drying in a humid climate

High humidity = solved

Two owners in Queensland humidity, in their own words. The short version: don’t overload the cabinet, give it a day or two longer, and it comes out right.

Nearly four times the hanging space, four more trays and a second motor means more biltong every 4 days. The KK12 is a household cabinet. This one is for people who are really serious about making it their way. If you are drying most weeks, or people have started asking to buy what you make, this is where the smaller cabinets run out of room.

Questions people ask

Any last questions?

The KK12 hangs up to 7kgs and has 12 trays of space with one motor. The KK16 hangs up to 25kgs of wet meat and features 16 trays and two motors. If you can’t get enough, or your friends are coming around more and more, then the KK16 is the one.

We have noticed quite a few customers are using the KK16 to start a small side hustle, but be sure to check out the KK25 if that’s what you’re looking for.

No. It runs at 1500W on 230V, which is a standard New Zealand socket. We do recommend not overloading the outlet with other high power draw appliances like your fridge though.

Nearly four times the hanging space, four more trays and a second motor means more biltong every 4 days. The KK12 is a household cabinet. This one is for people who are really serious about making it their way.

That is what it was made for. Two motors mean neither one carries the whole cabinet, which is what can wear a machine out.

A bigger box needs more air moving through it. Two motors keep the airflow even end to end, so a full load dries at the same rate. We wanted to make sure that no matter which unit you pick, the quality of the end product is never compromised. You just get a lot more per batch.

Twelve months on working parts. Spares are listed in the Equipment Spares section of the site. We are local out of Matakana so you can buy with confidence knowing we are ready to help you without waiting for a supplier out of China. This isn’t a dodgy dropshipping operation.

We have a 14 day money back guarantee and a 12 month warranty for your peace of mind. If it comes back boxed and unused there will only be a 10% restocking fee.
