The Biltong Boss KK12 is a dedicated stainless steel biltong cabinet for making authentic biltong and droëwors. It just so happens to also be able to handle dehydrator duties for jerky, fruit leather and other dried foods at home in New Zealand. It hangs up to 7 kgs of wet meat on a 5 bar rack or can hold 12 stainless steel trays, and runs on digital temperature control from 20°C to 90°C.
Built for SA expats and anyone else who demands the best
You already know what a decent bag of biltong costs. You’ve done the maths at the counter and put it back. This is the machine that ends that conversation.
Hang up to 7kg of wet meat, set the one touch biltong function and leave it be. The KK12 is optimised to take all the guesswork out of the curing process. It uses airflow and an internal thermostat to maintain the ideal environment for meat curing. The biltong setting gives you 3 temperature options between 20°C and 30°C.
Regardless of outside conditions, including high humidity environments, you will get consistent results based on your recipe.
The second function of the KK12 is the dehydrator function. This switches the unit from airflow to low temperature heating between 30°C and 90°C for up to 24 hours.
Ideal for jerky, dried fish, fruit, herbs, whatever you feel like drying, it all goes in the same cabinet.
It was built for biltong first, but can handle all your dehydrator needs. Plus the food grade stainless steel construction, including the 12 trays, means you aren’t exposing your food to heated plastic like most cheaper dehydrators.
This is your opportunity to make biltong your way without the guesswork of a DIY box or the cost of buying biltong by the bag.

Biltong takes days, not hours. The biltong setting runs up to 96 hours at 20 to 30°C, so a full batch goes through without you touching the dial. The KK11’s 24 hour timer needs a reset every morning. These two do not.

About this item
What you get and why
Set it for four days and forget it
The biltong setting runs up to 96 hours at 20 to 30°C. Biltong takes days, so the machine is built around days rather than hours. No resetting a timer every morning.
Thirty six hooks and twelve trays, working at once
Hang whole pieces on the 5 bar rack and fill the trays underneath with snapsticks, leaves, jerky or fruit. One run, two jobs.
Flies stay outside
A gasket and wire mesh seal keeps insects out of the cabinet. This is the difference between a machine and a box in the garage, and it is why people stop losing batches in summer.
It fits under your cupboards
Around 48.7cm tall, so it sits on the bench and slides under standard overhead cupboards instead of living on the floor.
Turn it up for everything else
The dehydrating setting runs 35 to 90°C for up to 24 hours. Jerky, fruit leathers, herbs from the garden and rusks all come out of the same cabinet.
Food grade stainless steel
SUS304 trays, handle and locks, in a 0.6 to 0.8mm SUS201 housing. Trays lift out and go in the sink, and nothing holds onto last month’s chilli.
Make it your way

Biltong
We missed authentic biltong from SA and that’s why this box exists in the first place. Take silverside or topside, slice it with the grain, hang it on the hooks and let the cabinet do the rest. 3 to 4 days later you have proper beef biltong at home, for way less than you pay in a shop. Venison works too if you like a stronger taste. Kudu as well, if you can get it.
Droëwors
Spiced sausage, dried until it snaps when you bend it. The hooks will take a whole run from the butcher in one go. One customer hung 4.8 metres in a single batch. Because it hangs, it stays round instead of going flat on one side the way it does on a tray.
Bluefin, marlin & dried fish
Not just a biltong box after all. Snapper, kahawai, marlin and bluefin all dry well. So that good fishing weekend does not take up valuable freezer space, or worse, have to be given away to friends and family.
Dried fruit, veg & rusks
Finally an easy way to get your 5 in with delicious kale chips you will not want to share. Green beans, courgette, cherry tomatoes. Plus all the fruits come out perfect for snacks, baking, cocktail garnish, and you can even use it to make dried rusks.
Fruit leathers
Bananas, pears, strawberries, peaches, apricots, apples, mango. Blend it into leather for the lunchbox, or dry slices for cereal, baking and salads. Sweet, and nothing in it but the fruit.

Questions people ask
Any last questions?
The KK11 is the most economical way to satisfy your biltong cravings. It has everything you need to make perfect biltong out of the box. There are a few bells and whistles which might make you consider the upgrade to the KK12 though.
For one, the KK12 is a hands off experience with a 96 hour continuous use timer whereas the KK11 has a 24 hour timer. That means you can set it and forget it.
The KK12 also has 2 extra trays worth of space which means longer slices of silverside can fit and more jerky or fruit per batch on the trays. When you start eating biltong again the 4 day wait is the hardest part so that extra capacity makes a difference.
Because biltong takes days, not hours. Four days at 20 to 30°C is a full batch without you touching the dial. The 24 hour timer on the KK11 requires a manual reset each day and is perfect for fruit, herbs and jerky. We recommend setting a reminder on your phone with the KK11 to make sure you reset the dial. For foolproof biltong every time, your best bet is the KK12.
The KK12 hangs up to 7kgs and has 12 trays of space with one motor. The KK16 hangs up to 25kgs of wet meat and features 16 trays and two motors. If you can’t get enough, or your friends are coming around more and more, then the KK16 is the one. We have noticed quite a few customers are using the KK16 to start a small side hustle, but be sure to check out the KK25 if that’s what you’re looking for.
Both units have the 96 hour timer for a hands off drying experience.
A gasket around the door and wire mesh over the vents. Flies and insects cannot get to the meat while it dries, which is the most common way a home batch is ruined. We would know, because it was a feature we specifically built into the unit from past painful experiences.
Around 48.7cm tall, so it clears the gap under most overhead cupboards and stays on the bench.
Twelve months on working parts. Spares are listed in the Equipment Spares section of the site. We are local out of Matakana so you can buy with confidence knowing we are ready to help you without waiting for a supplier out of China. This isn’t a dodgy dropshipping operation.
We have a 14 day money back guarantee and a 12 month warranty for your peace of mind. If it comes back boxed and unused there will only be a 10% restocking fee. We ship from our warehouse in Matakana so everything is handled locally. Faulty on arrival is covered in full if you tell us within 7 days with a photo. Send us an email to info@kalahari.nz.
