INGREDIENTS

  • 7.5 kg Beef and 2.5 kg sheep tail fat
  • 100 g Coarse salt
  • 10 g Ground allspice
  • 10 g Coriander
  • 15 g Freshly ground Black Pepper
  • 100 ml Worcestershire sauce
  • 200 ml Vinegar
  • 10X1 kg salami casings #43

METHOD

  1. Using a sharp knife cube all the meat.
  2. Combine all the ingredients and mix into meat.
  3. Mince through number 8 mincer plate.
  4. Place meat into ziplock bag and refrigerate for 3 hours.
  5. Prepare #43 salami casing.
  6. Stuff casings with minced meat mixture.
  7. Freeze casings to make for easy slicing at 4mm.
  8. Once sliced place 160 units on your trays and place into KK11.
  9. Set temperature to 30 degrees for 24 hours.
  10. Ready in 18-24 hours.

Tip – in high humidity areas place your product into a brown paper bag into fridge and eat when hungry.
