Do I need the KK25, or is a KK16 enough?
Depends on the orders, not the ambition. A KK16 is a home unit and needs a rest between loads. If you're already turning people away or running two boxes, the KK25 does 20 to 25kg a load and runs back to back. If you're doing a batch a fortnight for mates, stay on the KK16.
Can I start on smalls only?
Plenty do. Smalls are the fastest thing to turn into cash: 24-hour cycles on trays, up to 10kg a day out of the KK25. Add slabs when the market asks.
What about the licence stuff?
I'm not MPI, so I won't rule on your setup. What I can do is walk you through what we did for our own RMP with Biltong Butcher, and which bits the chamber makes easier. Ask me on the call.
