What each tool does

Biltong Chamber KK25

20 to 25kg of wet meat a load, coming out at roughly 12 to 15kg of finished biltong in 72 to 96 hours depending on how thick you slice. Switch to trays and it dries up to 10kg of smalls every 24 hours: snapsticks, stokkies, biltong leaves, nuggets, wagon wheels, snack-size retail packs.

The temperature control system holds temperature and airflow inside the chamber regardless of the weather outside, which is what stops a batch case hardening. Same recipe, one load, one set of conditions. The volume is the only thing that changes.

KK JQ48 Slicer & Grinder

Feed chilled, boneless meat in and it comes out as even strips, up to 300kg an hour, so a full KK25 load of 25kg is sliced in minutes. The knife cartridge cuts every strip to the same thickness. That means the whole load dries at the same rate, and you can take it all down together.

Flip the mode switch, fit a grinding plate and it puts through up to 80kg of mince an hour, so tougher cuts become wors or burger patties to sell next to your biltong. It has an emergency stop and a reverse for jams, and ships with 10mm knife cartridges and 3 grinding plates.

Dried slabs go in and bag-ready shredded biltong comes out in seconds, with the professional finish that used to cost you an evening of sawing with a knife. And shredded biltong sells as its own line, so every batch puts a second product on your counter or website.

It’s the same commercial-grade shredder our butchery clients use. The die-cast aluminium body hinges open for cleaning, and the blade is balanced so it runs without shaking the bench. There’s a protective flap for safe use. It bolts to a table or stand and fits a tight counter.

Before you buy

Questions people ask before they buy this bundle

Because size isn’t the only consideration. Home boxes are not designed to be run like commercial units; they need a 12-hour cool down after each cycle. The KK25 runs each load under the same conditions at commercial capacity over and over. A lot of the biltong brands who buy from us started on a home box. The bundle is for those ready to scale.

On slabs, one four-day cycle after another gives you around 21 to 22kg of finished biltong a week: 25kg of wet meat in, about 12.5kg out, every four days. On trays of smalls, up to 10kg a day. The same equipment caters for different customers.

For consistent results set the JQ48 to 20mm or less. Thicker than 20mm and we cannot guarantee a consistent result. The JQ48 ships with a 20mm cartridge; 10mm, 5mm and 3mm are available as blade sets.

Dried. The JQ48 handles the fresh meat before drying; the shredder handles the finished biltong after. Two jobs, two machines, and this bundle has both.

It depends on what you make, where you sell it and how much, and we are not the people to rule on it for you. What we can tell you is that we have been through the MPI process, an RMP under the Animal Products Act, for our own biltong production, and our commercial chambers support the controlled, repeatable production and record keeping that process asks for. Talk to MPI or a food safety consultant about your setup, and talk to Warren about what we learned doing ours.

Yes. The KK25 is 750W on 220V single phase and the JQ48 is 450W on 220 to 240V, so a standard socket runs them. No three-phase supply needed.

The chamber holds its temperature and airflow regardless of the weather outside, so a recipe that works in a home unit should behave the same way in the KK25. What changes is the volume. The one thing to get right is slicing: even strips dry evenly, and that is the JQ48’s job.
